Ingredients

5 medium, ripe Bartlett pears, peeled and chopped 

½ cup deglet noor dates, chopped (about 12 dates)

1 teaspoon pure vanilla extract

Zest from 1 navel orange 

1 teaspoon ground cinnamon, divided

1 cup rolled oats

¾ cup raw pecans, finely chopped

½ cup unsweetened shredded coconut

¼ teaspoon salt

¼ cup melted coconut oil

3 tablespoons pure maple syrup

Whipped cream for serving, optional


Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Place pear slices and chopped dates in a 8x8 baking dish. Add vanilla extract, orange zest and ½ teaspoon cinnamon and toss to combine.

  3. In a bowl, mix together the oats, pecans, coconut, remaining ½ teaspoon of cinnamon, salt, coconut oil, and maple syrup. Spoon the oat topping over the pears.

  4. Bake for 40 to 50 minutes or until the topping is golden and the pears are tender and bubbly. Serve warm with dollops of whipped cream if you’d like.
